Cool Drinks for a Hot almost Summer Day

by nicholmom3 on June 19, 2008

I’m a drinker.

There, I said it. Sometimes my drinks include alcohol, most of the times they don’t. Since I am moving towards a clean living/eating lifestyle, I limit my alcohol consumption. Plus, you can always count on my to lug a bottle of water around, drinking it whether it is hot, cold, or room temperature.

I’m a big fan blended beverages and summery cocktails. I think I’ll post one of each! These are all vegetarian, sometimes vegan. They are made sans alcohol in the recipes, but as we all know, it can be added to just about anything!

Smoothie #1 The Fridge Cleaner

(Single Serving- multiply as needed)
2-3 large chunks pineapple, melon, strawberries ect. (use what ever you have on hand)
1-2 oz Ocean Spray Cranergy (gives a little something extra to the drink)
2-3 ice cubes

Place all ingredients in blender, and whir away! Make sure if you are using pulpy fruits (like the pineapple) to really blend well, unless you enjoy chewing your drinks. If the drink seems too thick, add a little bit more juice to loosen it up.

Mocktail #1- Cardinal Punch

This is a lovely sweet/slightly tart mocktail that works perfectly for those evenings onthe deck or by the pool. Mix one of these babies up at parties for the designated drivers and no one will feel left out!

1 oz Lemon juice (freshly squeezed is always preferable)
2 oz Orange Juice
4 oz Cranberry Juice
Slice of orange and lemon
Chilled Gingerale

Mix together juices and pour into chilled Martini glass, stir well. Top off with chilled gingerale, and add decorative fruit slices to glass.
