Okay, I am going to just admit right now that what I am about to share with you is one of those things that is oooooh so bad, while at the same time oooooh so good! If you lack will power and have trouble resisting such things, stop reading this post. If you have the power to resist or are like me and just don’t care about being good all of the time(LOL!), keep reading and enjoy!
I am in a small group Bible study, and as is our common practice in today’s society, when gathering together we serve food! We generally take turns providing snacks, and while our snacks are usually light and healthy, sometimes we share an extra special treat. Last night, that treat was Happy Corn! And happy it did make me! Have you ever had puff corn? It generally comes in two flavors, cheese and butter. It is a lot like cheese puffs or cheese curls, but is supposed to be more like popcorn without the hulls or hard kernels. I have a daycare in my home. So, I buy puff corn quite often because the kids love it. It is easy to eat and doesn’t pose a choking hazard to my little ones. I have been known to eat a few handfuls of it myself. Last night, one of the ladies in our group brought carmel puff corn to share. Was it a new flavor produced by Mike-Sells or any other company that markets puff corn? Oh no, it was homemade! It was wonderful! In fact, the gal who brought this fabulous little treat knew that we would love it and brought the recipe so that we could make some on our own!
So, again, if you are dieting or need to resist sugar and fat, STOP HERE! If not, proceed at your own risk! These are addictive. You may eat the whole batch all by yourself. Don’t ask me how I know!
Happy Corn
1/2 Cup Real Butter
1 Cup Brown Sugar
1/4 Cup Kairo Syrup (Light)
1/2 tsp. Salt
1/2 tsp. Baking Powder
1 12 oz. Bag of Puff Corn
Melt the butter and syrup. Add the brown sugar and salt and mix well. Bring to a boil. Remove the carmel mixture from the heat and stir in the baking powder. Pour warm mixture over the puff corn in a large bowl. Gentle stir to coat. Spread the coated puff corn onto a greased cookie sheet. Bake at 250 degrees for 45 minutes. Bake less time if you want a gooier texture. Place cooled Happy Corn in an air tight container. Serve as a snack at your next get together. OR eat it all before anyone gets home!
