Simple, Delicious Crock Pot Dinner

I find that a busy mom’s saving grace is a good collection of Go To/Quick and Easy recipes for those evenings when the schedule is packed or last minute events come at you.  I have a small stockpile of favorite recipes for when I am in a hurry or I know that I will have an evening where every minute is full.  My favorite go to’s typically involve my crock pot.  Our family’s favorite go to recipe is Easy Salsa Chicken over rice.  I put a slow cooker liner, toss in an entire frozen bag of boneless skinless chicken breasts, pour in 1/3 cup chicken broth or water if you don’t have broth on hand, 1 16oz or 24oz jar of chunky mild salsa and a can of Mexicorn. Cook on low for 6 hours or high for 4 hours, shred in the crock pot and serve over minute rice, in soft or hard shell tacos and even over lettuce (for a lighter meal). The chicken is tender and delicious, a hot meal is ready with little effort and cleanup is minimal and quick.
