My Favorite (EASY!) Crockpot Chili

I do realize that we are smack dab in the middle of summer folks. But here in Minnesota we had a day of  “summer polar vortex” with highs in the low sixties. First instinct—grab a sweatshirt and second—make chili! This chili recipe is one of my top five favorite recipes because it is easy, filling and feeds a crowd (it’s also great to freeze in smaller portions for quick meals) and we eat it all year long.

Ingredients

1 lb ground beef (or ground turkey)
1 large can (16 oz.) tomato sauce
1 large can (16 oz.) diced tomatoes
1 can (8 oz.) black beans
1 can (8 oz.) light red kidney beans
1 can (8 oz.) dark red kidney beans
1 can (8oz.) white hominy
1 onion
Chili powder, salt and pepper to taste
1 pkg shredded cheddar cheese
1 container sour cream

*You can add more or less of your favorite beans.

To make (here is the beautiful part of this recipe!):

Pour tomato sauce and diced tomatoes in to crock pot. Rinse and drain beans and hominy and add to crock pot. Brown ground beef, drain and add. Slice onion and add. Add chili powder, salt and pepper to taste.

Cook low for 8 hours or high for 4.

Top with cheese and sour cream.

Super easy, super delicious and super filling—enjoy!
